Eating Thaumatococcus Daniellii (katemfe) fruit-the source of the sweet protein thaumatin-can be a unique experience, especially since the sweetness comes not from the fruit pulp, but from the seed membrane.

Open the Fruit:

(1) Gently cut or peel open the freeze dried fruit

(ii) Inside, you will find 1-3 black seeds, each covered by a whitish or translucent membrane (Called the aril) packed at the flat base of the Seeds.

(iii) Eat the whitish aril packed at the base of the seeds

(vi) Do not eat the seed black seed itself (Carefully chew the aril at the flat base of the seed.

(v) This aril contains the Thaumatin, which is

extremely sweet - but the sweetness has a slow onset and linger the tongue and throat.

(i) Katemfe is similar to miracle Fruit(Synsepalum dulcificum) but the thaumatin sweetness enhance or alter the taste of other foods you eat or drink afterward:

How to Macerate Freeze dried :

Thaumatococcus Daniellii (Kateme) in water

Purpose:

To soften and extract the taumatin rich aril into water for traditional Sweetening or - experimental purposes.

What you will Need:

(i) Freeze dried Thaumatococaus Daniellii(Katemfe) Fruit

(ii) Clean drinking Waten (500ml) preferably cool or room temperature

(iii) Clean bowl or Cup.

(iv) Spoon and Mesh strainer

Step -by-step instructions:

(i) open Freeze dried Katemfe fruit.

(ii) Remove 3 seeds gently by Keeping the white aril at the flat base of the seeds intact.

(iii) place the 3 seeds with the white aril intact into a cup or bowl of 500ml of clean water

(iv) Let them soak for 1-3 hours or more with gently stirring occasionally.

(v) This allows the thaumatin to dissolve into the

water as the aril Softens.

(vi) After soaking, you can gently press or Mash the seeds with a clean spoon to help release more thaumatin from the aril

(vii) Don’t crush the hard black seeds -only agitate the gel coating.

Straining:

(I) Remove the seeds.

(ii) use a Fine mesh Strainer-to Filter the Liquid

Use or Store:

The resulting liquid is sweet and can be used-to:

(i) Sweeten teas or drinks

(ii) Enhance the taste of a sour foods

(iii) Explore in food science expeniments

(iv) Refrigerate if not used immediately.

Notes;

(i) Thaumatin is heat-sensitive, so avoid boiling, Keep water Cool or lukewarm.

(ii) The sweetness will be mild compared to pure Thaumatin isolate, but still noticeable,

(iii) The aril effect can linger, So it may alter or change the perception of Flavors even after Swallowing.

(vi) It is non- Caloric in the amounts typically consumed.
