Potash rockstone (Potassium carbonate) commonly known as kauw, kanwa, etc is used in African kitchen as food tenderizer and soup thickener. It is used to soften greens; bitter leaves, cassava leaves, Roselles, etc and beans ( red and black beans) in the cooking process and help reducing the cooking time.
